Ingredients
- 1 pound fresh okra
- 2 large eggs
- 1 cup panko breadcrumbs
- ¼ cup cornmeal
- 2 tbsp canola oil
- Seasonings (salt, celery salt, garlic powder)
- Remoulade sauce for dipping
Instructions
Prepare: Slice fresh okra into ¼-inch rounds. In a skillet, lightly toast panko breadcrumbs with canola oil until golden brown
Season: Combine toasted panko with cornmeal and seasonings in a shallow dish. Beat eggs in a separate bowl
Coat: Dredge okra pieces in beaten egg, then thoroughly coat with the seasoned panko-cornmeal mixture
Air Fry: Arrange in a single layer in air fryer basket. Cook at 350°F / 176°C for 10-12 minutes until golden and crispy
Serve: Transfer to serving plate and enjoy hot with remoulade sauce
