Ingredients
- 1 lb zucchini, cut into sticks
- ¼ cup flour
- 1 tbsp cornstarch
- 3 egg whites
- Parmesan cheese
- Panko breadcrumbs
- Seasonings (oregano, garlic powder)
- Cooking spray
- Ranch dressing for dipping
Instructions
Prepare: Slice zucchini lengthwise into fry-shaped sticks. In a shallow bowl, combine flour, cornstarch, and seasonings
Dredge: First coat zucchini in the flour mixture, then dip in beaten egg whites, and finally press into combined Parmesan and panko mixture
Cook: Place in air fryer basket in a single layer. Air fry at 400°F / 204°C for 5-8 minutes until exterior is golden brown and crispy
Serve: Transfer to serving plate and enjoy immediately with ranch dressing for dipping
