Ingredients
- 1½ cups all-purpose flour
- 1¼ tsp baking powder
- ¼ tsp baking soda
- ⅛ tsp kosher salt
- ⅓ cup granulated sugar
- 6 tbsp unsalted butter
- ½ cup buttermilk
- ½ cup strawberries
- ¼ cup powdered sugar
- 1-2 tbsp heavy cream
Instructions
Prep: In a medium bowl, sift together the flour, sugar, baking powder, baking soda, and salt
Mix: Cut cold butter into pea-sized pieces and blend into dry ingredients using a pastry cutter or forks until crumbly
Combine: Pour in buttermilk and stir until just combined into a shaggy dough
Add Fruit: Gently fold in diced strawberries, taking care not to crush them
Shape: Pat dough into a ¾-inch thick circle and score into wedges
Air Fry: Transfer carefully to greased air fryer basket and cook at 350°F / 177°C for 15 minutes until fully baked
Glaze: Whisk powdered sugar with cream until smooth, then drizzle over warm scones
Note: Use maximum ½ cup dried strawberries to prevent excess moisture. Ensure strawberries are well-dried before adding to dough
