Ingredients
- 2 cups white rice
- 1 lb beef sirloin steak
- 3 cups broccoli florets
- 1 cup red bell pepper strips
- 4 green onions, sliced
- ⅓ cup low-sodium soy sauce
- 3 tbsp rice vinegar
- 2 tbsp honey
- 1 tbsp fresh ginger
- 3 cloves garlic, minced
- 1 tbsp vegetable oil
- 1 tsp sesame oil
- 1 tsp cornstarch
- ¼ tsp crushed red pepper
- cooking spray
- sesame seeds
Instructions
Prep: Preheat air fryer to 400°F / 204°C
Mix: In a large bowl, combine beef, broccoli, bell pepper, white parts of green onions, and vegetable oil. Lightly coat air fryer basket with cooking spray
Cook: Air fry for 5 minutes, then stir. Continue cooking until beef reaches desired doneness (145°F / 63°C for medium), about 6-8 minutes more. Remove and rest for 5 minutes
Sauce: Combine soy sauce, vinegar, honey, ginger, garlic, sesame oil, and crushed red pepper in a saucepan. Bring to boil, reduce heat and simmer until reduced to ½ cup (about 10 minutes)
Thicken: Mix cornstarch with 1 tbsp water, stir into sauce until thickened (about 1 minute)
Serve: Toss beef and vegetables with sauce, garnish with remaining green onions and sesame seeds. Serve over hot rice
