Ingredients
- 3 medium ripe but firm Hass avocados
- 1 cup panko breadcrumbs
- 1 tbsp Tajín seasoning (optional)
- 1 tsp kosher salt
- ½ tsp garlic powder
- 2 tbsp extra-virgin olive oil
- 1 large egg, lightly beaten
- Chipotle mayo or ranch for dipping (optional)
Instructions
Prepare Coating: In a shallow bowl, combine panko breadcrumbs, Tajín (if using), salt, and garlic powder. Drizzle with olive oil and mix well.
Prep Avocados: Halve and pit avocados. Cut each half into 4 even slices and carefully remove peel.
Bread: Dip each avocado slice in beaten egg, then coat thoroughly in seasoned panko mixture.
Air Fry: Place breaded slices in a single layer in air fryer basket. Cook at 350°F / 176°C for 7-9 minutes, flipping halfway, until golden brown and crispy.
Serve: Immediately serve hot with chipotle mayo or ranch for dipping.
