Ingredients
- 1 can artichokes
- 1½ cups Greek yogurt or Labneh
- ⅓ cup Parmesan cheese
- 2 tbsp bread crumbs
- 2 tbsp olive oil
- 2 tbsp parsley
- 1 lemon
- 1 garlic clove
- salt & pepper
Instructions
Prep: Drain artichokes and pat dry thoroughly with paper towels. In a mixing bowl, combine artichokes with 1 tbsp olive oil, juice of half lemon, bread crumbs, Parmesan cheese, salt, and pepper
Air Fry: Transfer seasoned artichokes to air fryer basket. Lightly coat with cooking spray. Cook at 400°F / 204°C for 12 minutes, flipping halfway through for even browning
Make Sauce: Spread yogurt or Labneh in a serving bowl. Mix in remaining lemon juice, grated garlic, and lemon zest. Season with salt and pepper to taste
Serve: Arrange crispy artichokes over yogurt sauce. Drizzle with remaining olive oil and garnish with fresh parsley, additional Parmesan, and a final seasoning of salt and pepper
