Ingredients
- 1.5 lbs russet potatoes
- ½ medium yellow onion
- 2 large eggs
- ¼ cup matzo meal
- salt & pepper, to taste
- Cooking spray
- Sour cream and applesauce for serving
Instructions
Prepare: Coarsely grate potatoes and onion using a food processor or box grater. Place in a clean kitchen towel and squeeze firmly to remove as much moisture as possible
Mix: In a large bowl, stir together the drained potato-onion mixture with beaten eggs, matzo meal, and season well with salt and pepper
Shape: Using a 2 tbsp measure, portion the mixture and gently press into thin patties
Cook: Air fry at 375°F / 190°C for 8 minutes, then carefully flip and cook another 8 minutes until golden brown and crispy
Serve: Transfer to a serving platter and enjoy hot with traditional toppings of sour cream and applesauce
