Ingredients
- 1 medium sweet potato
- 1 tbsp canola oil
- 1 tsp kosher salt
- ¾ tsp dried thyme
- ½ tsp black pepper
- ¼ tsp paprika
- Pinch cayenne (optional)
- Cooking spray
Instructions
Prepare: Using a sharp knife or mandoline, slice sweet potato into uniform 1/8 inch rounds. Place slices in cold water and soak for 20 minutes to remove excess starch. Drain and thoroughly pat dry with paper towels
Season: In a large bowl, drizzle oil over dried sweet potato slices. Sprinkle with salt, thyme, black pepper, paprika and cayenne if using. Toss gently to evenly coat all pieces
Cook: Air fry at 360°F / 182°C for 19-22 minutes, shaking the basket every 5 minutes for even cooking. Chips should be golden brown with slightly curled edges
Rest: Remove chips to a paper towel-lined plate. They will continue to crisp up as they cool to room temperature
