Ingredients
- 2 large eggs
- ½ cup seasoned breadcrumbs
- ½ cup seasoned panko
- 12 chicken tenders (1¼ lbs)
- 1 tsp kosher salt
- Black pepper, to taste
- Olive oil spray
- Lemon wedges
Instructions
Prep: Season chicken tenders generously with salt and pepper to taste.
Coating Station: Set up two shallow bowls - one with beaten eggs and another with combined breadcrumbs and panko.
Bread: Working one at a time, dip each tender in egg mixture, then coat thoroughly in breadcrumb mixture. Place on a clean plate.
Oil: Spray both sides of breaded tenders generously with olive oil spray.
Air Fry: Cook in batches at 400°F / 204°C for 5-6 minutes per side until golden brown and cooked through.
Serve: Plate immediately and serve with fresh lemon wedges for squeezing.
