Ingredients
- 8 oz dried chickpeas, soaked overnight
- Fresh herbs (parsley, cilantro)
- Shallot and garlic
- Olive oil
- Spices (cumin, salt, baking powder)
- All-purpose flour if needed
- Cooking spray
- Tahini sauce for serving
Instructions
Blend: Combine soaked chickpeas, fresh herbs, shallot, garlic, olive oil and seasonings in food processor until mixture is finely ground but not pasty
Rest: Place mixture in refrigerator for 30 minutes to help it firm up
Shape: Using damp hands, form mixture into 1-inch balls or small patties
Cook: Air fry at 350°F / 176°C for 10 minutes, then flip and cook additional 5 minutes until golden brown and crispy
Serve: Enjoy hot with tahini sauce and warm pita bread
