Ingredients
- 4 chicken thighs, bone-in skin-on
- 1½ lbs Yukon Gold potatoes
- Fresh garlic and thyme
- Lemon zest and juice
- Dried oregano
- Olive oil
- Fresh dill
- Salt and pepper
Instructions
Prepare Marinade: Combine minced garlic, fresh thyme, lemon zest, olive oil, and oregano in a bowl. Add chicken and coat well. Let marinate for at least 30 minutes.
Prepare Potatoes: Slice potatoes into even wedges. Soak in cold water while chicken marinates to remove excess starch.
Cook Chicken: Place marinated chicken in air fryer basket skin-side up. Cook at 400°F / 204°C for 22-25 minutes, flipping halfway through cooking.
Air Fry Potatoes: Drain and pat potatoes dry. Season with oil and spices. Air fry at 400°F / 204°C for 20-25 minutes, tossing every 7-8 minutes for even browning.
Serve: Garnish with fresh dill and a squeeze of lemon juice before serving.
