Ingredients
- 2 lbs chicken thighs, cut into 1.5-inch pieces
- ½ cup olive oil
- ¼ cup white wine
- 3 tbsp lemon juice, divided
- 4 cloves garlic, minced
- ⅔ cup Italian breadcrumbs
- ⅔ cup panko
- ½ cup grated Parmesan
- 4 tbsp butter
- Fresh parsley
- Seasonings (salt, pepper, red pepper flakes, oregano)
- 6-8 inch skewers
Instructions
Marinade: Combine olive oil, white wine, 2 tbsp lemon juice, minced garlic and seasonings in a bowl. Add chicken pieces and coat well. Let marinate for 30-60 minutes
Prepare Coating: In a shallow dish, mix together Italian breadcrumbs, panko, grated Parmesan and a pinch of seasonings
Assemble: Remove chicken from marinade and coat each piece in the breadcrumb mixture. Thread coated chicken onto skewers
Cook: Air fry at 390°F / 198°C for 12 minutes, turning halfway, until golden brown and internal temperature reaches 165°F or 74°C
Sauce: In a small pan, melt butter with remaining garlic and 1 tbsp lemon juice. Stir in fresh parsley
Serve: Drizzle warm lemon-garlic butter sauce over the cooked chicken skewers
