Ingredients
- ¼ cup mayonnaise
- 2 tsp crumbled cotija cheese
- 1 tsp lime juice
- ¼ tsp chili powder
- 2 ears corn, shucked and halved
- 4 sprigs fresh cilantro, or to taste (Optional)
Instructions
Prep: Preheat air fryer to 400°F / 204°C
Mix: Combine mayonnaise, cotija cheese, lime juice, and chili powder in a shallow dish to create the coating
Coat: Thoroughly roll each corn piece in the mayonnaise mixture until evenly covered
Cook: Place corn pieces in the air fryer basket and cook for 8 minutes
Serve: Garnish with fresh cilantro if desired and serve immediately
