Ingredients
- 2 bunches beets, peeled and cubed
- 1 tbsp olive oil
- Bay salt (bay leaves, salt, white pepper)
- Fresh beet greens for garnish
- Cooking spray
Instructions
Prepare: Create bay salt by finely grinding bay leaves together with salt and white pepper
Season: In a large bowl, drizzle cubed beets with olive oil and sprinkle with bay salt mixture, tossing to coat evenly
Cook: Place seasoned beets in air fryer basket and cook at 400°F / 204°C for 18-20 minutes, shaking halfway through, until beets are tender when pierced
Garnish: Transfer to serving dish and top with freshly shredded beet greens, finishing with an extra sprinkle of bay salt
